Mr. Merlo currently serves on the boards of the CVB, DLBA, LBHA, MHALA, and Los Angeles Regional Food Bank. He is also on the advisory boards of CSULB Hospitality Program, Harbor College Culinary Program, Jordan High School & Browning High school Hospitality Program. 

With over 35 years of industry experience overseas and in the USA, Merlo has a particular passion and extensive knowledge in food and beverage, a great complement to the partnership between hotel and destination restaurant, James Republic. "Our hotel continues to undergo an exciting guests," shares Merlo. "I love this industry and daily inspiration from our staff and our guests feeds my passion to provide exemplary service!" This contagious enthusiasm isn't surprising when you consider that Merlo became an executive chef at a mere 28 years of age.
